Southern Fried Salmon Patties

Ingredients:

  • 2 cans (14.75 oz each) of pink or red salmon, drained and flaked
  • 2 large eggs, beaten
  • 1/2 cup of finely diced onion
  • 1/2 cup of finely diced green bell pepper (optional)
  • 1 cup of breadcrumbs or cracker crumbs
  • 1/2 cup of all-purpose flour, for coating
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • Salt and black pepper to taste
  • 2 tablespoons of fresh parsley, chopped (optional)
  • Vegetable oil, for frying

 

Instructions:

  1. Prepare the Salmon Mixture:
    • In a large bowl, combine the flaked salmon, beaten eggs, diced onion, and green bell pepper (if using). Mix well to ensure the ingredients are evenly distributed.
    • Add the breadcrumbs or cracker crumbs to the salmon mixture. Season with garlic powder, paprika, salt, and black pepper. If you’re using parsley, add it now. Mix everything together until well combined. If the mixture feels too wet, you can add a bit more breadcrumbs or cracker crumbs until it holds together well.
  2. Form the Patties:
    • Divide the salmon mixture into equal portions, shaping each into a patty. This recipe should make about 8-10 patties, depending on the size you prefer.
  3. Coat the Patties:
    • Spread the all-purpose flour on a plate or shallow dish. Lightly coat each salmon patty in the flour, shaking off any excess. This step helps to create a crispy exterior when fried.
  4. Fry the Patties:
    • Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully place the patties in the skillet.
    • Fry the patties for about 3-4 minutes on each side, or until they are golden brown and crispy. Avoid overcrowding the skillet; you may need to work in batches depending on the size of your skillet.
    • Once fried, transfer the patties to a plate lined with paper towels to drain any excess oil.
  5. Serving:
