Chili Mac

Ingredients:
– 1 pound ground beef
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 1 can (14.5 ounces) diced tomatoes
– 1 can (15 ounces) kidney beans, drained and rinsed
– 1 can (15 ounces) tomato sauce
– 2 cups beef broth
– 2 teaspoons chili powder
– 1 teaspoon cumin
– 1/2 teaspoon paprika
– Salt and pepper, to taste
– 8 ounces elbow macaroni
– Optional toppings: Shredded cheese, chopped green onions, sour cream

 

 

Instructions:

1. In a large skillet or pot, cook the ground beef over medium heat until browned. Break it up into crumbles with a spatula or spoon as it cooks.

2. Add the chopped onion and minced garlic to the skillet with the ground beef. Cook for about 3-4 minutes, or until the onion is softened and translucent.

3. Drain any excess fat from the skillet.

4. Stir in the diced tomatoes, kidney beans, tomato sauce, beef broth, chili powder, cumin, paprika, salt, and pepper. Mix well to combine all the ingredients.

5. Bring the mixture to a simmer and let it cook for about 15 minutes to allow the flavors to meld together. Stir occasionally.

6. Meanwhile, cook the elbow macaroni according to the package instructions until al dente. Drain the cooked macaroni.

7. Add the cooked macaroni to the skillet with the chili mixture. Stir to combine and let it simmer for an additional 5 minutes to allow the macaroni to absorb some of the flavors.

8. Taste the chili mac and adjust the seasoning if needed.

9. Serve the chili mac hot, garnished with shredded cheese, chopped green onions, and a dollop of sour cream if desired.
